To be honest, I am a bit of a lazy cook or perhaps not a lazy cook but a lazy grocery shopper. I just don’t like doing it so I will create meals out of whatever I have in the house, as opposed to figuring out what I want to make and then going to the store. This past weekend, I had some pears sitting in my fruit bowl getting mushy and making me feel very guilty so I decided it was time to use them in a quiche. Quiche is one of those great meals for using up leftovers. Just throw whatever you have in a pie crust and seal it in with milk and eggs.
Pear and Brie is one of my favourite combinations.
What you will need:
2 Tbsp of butter
Two pears, doesn’t really matter what kind, sliced
About a ¼ of diced onion
2 Tbsp of brown sugar
Some Brie cheese (about ½ of a small round)
3 eggs
1 ½ cups of milk/cream/whipping cream
Salt and pepper to taste
A piecrust.
I didn’t have a store bought piecrust so I did my lazy man’s crust:
1 ½ cups of flour
tsp of salt
Add ¼ of fat (butter or lard)
Blend that all up with a pastry blender or your hands until the lard is pea sized.
Add cold water one tbsp. at a time until it is dough consistency. And no Martha Stewart, I did not put it in the fridge for at least an hour. Moving on…
Preheat oven to 420°
If you are using a store bought pie crust in a tin pan put it on a baking sheet BEFORE you put everything in it. This recipe will do two shallow pie crusts or one deep one.
Melt the butter in a sauce pan and sauté the onion with the brown sugar until all is bubbly and brown. Add the pear and continue to cook until the pear is soft. Put that all in the bottom of your pie crust.
Cut your brie in strips and tear off pieces to place evenly over the pear and onion. Season with salt and pepper.
Mix eggs and milk and pour mixture into the pie crust but not to overflowing.
Bake for 20 minutes at 420° then lower the temp to 350° and bake for 30 more minutes or until it is a lovely brown on top.
